Ingredients:


Cupcake: 


  • 1 shot espresso (or 2 tsp espresso powder dissolved in 2 Tbsp hot water);
  • ⅓ cup buttermilk; 
  • 1¼ cups flour; 
  • a pinch of baking soda; 
  • a pinch of salt; 
  • ½ pound of granulated sugar; 
  • 5 tablespoons butter; 
  • 2 teaspoons vanilla extract; 
  • 2 large eggs;

Buttercream: 


  • ½ cup unsalted butter; 
  • 2 cups confectioner’s sugar, sifted;

Instructions:


  • If you’re using powder, combine espresso and boiling water and stir until dissolved.
  • Combine flour, baking soda, and salt and stir with a whisk.
  • Place granulated sugar, butter, and vanilla extract in a bowl and beat with a mixer at medium speed for 5 minutes.
  • Add eggs, 1 at a time, beating well after each addition. Add flour mixture and buttermilk mixture.
  • Place the mixture into 12 muffin cupcakes and bake at 180 degrees Celsius for 20 minutes until golden brown.

Buttercream Directions:


  • Cream the butter in a stand mixer with a paddle until fluffy, gradually add sugar and also vanilla extract; add milk and beat for another 3 minutes.
