I’m a child of the 80’s, and when I think of mint, I can’t help but remember a very specific commercial.
If you’re also an 80’s child, then you know the one - where a person takes a bite of a peppermint chocolate candy and suddenly feels the sensation of a snowy, chilly location, shifting from an ordinary day at work or home to blizzard-like conditions, soaring off a ski slope, etc.
Especially regarding the visuals, this was a genius marketing strategy, seemingly insinuating these chocolate coated mint-flavored candies had sensational chilling powers.
And, if you know anything about peppermint oil, you know these marketing masters were certainly on-target.
Peppermint oil, due to an organic compound called menthol, does indeed have the ability to make you feel cooler.
For instance, I love using essential oils throughout my life in numerous ways - aromatically, topically, and even internally with appropriate oils.
And, in the hot summer months, paired with a carrier oil, peppermint is a go-to oil for me to cool down on a summer’s day.
This same attribute of peppermint oil is what makes creamy, sweet, and cool mint cookies and cream ice cream taste not only delicious but also refreshing after a day spent soaking up the summer sun.
But, while those flavors of cool peppermint, subtly sweet chocolate cookies, and velvety smooth and creamy vanilla filling are truly fabulous, seeming as if nothing could possibly enhance such a taste bud tantalizing experience, there is indeed another addition that could take these flavors to new heights…coffee!

Affogatos are super simple, incredibly delicious, and just the perfect treat for including your favorite ice cream (or gelato) and coffee flavors effortlessly in one dish (or mug) to easily enjoy.
And here, as you might have already guessed, you’ll get to boost the infused minty-chocolate flavors in this brew with a refreshing, creamy, summer-time classic - mint cookies and cream ice cream!
Note: A true affogato calls for hot coffee or espresso to be poured over an indulgent scoop of ice cream or gelato, but here’s a personal tip. I love to make what I suppose is somewhat of a cross between an affogato and an ice cream float, where I add a scoop of ice cream to a tall glass, then top with cold brewed coffee.
This variation allows for less melting (of the ice cream), instead allowing me to savor the treat a little longer from my spoon.

Ingredients
- 4 ounces strong, freshly brewed Lifeboost Mint Cookies ‘n Cream Coffee
- ½ cup, or one large scoop mint cookies and cream ice cream or gelato
Instructions
- Add ice cream or gelato to a large mug.

Ingredients
- 8 ounces cold brewed Lifeboost Mint Cookies ‘n Cream Coffee
- ⅓ cup sweet cream coffee creamer
- 2 tablespoons chocolate syrup
- 4 mint Oreos, divided
- 1 ½ cups ice
- Whipped cream, for topping
Instructions
- Place one mint Oreo cookie in a sandwich bag and crush into fine crumbs, set aside.
- Add coffee, creamer, chocolate syrup, 3 mint Oreos, and ice to a blender.
- Blend on high until the mixture is smooth.
- Pour blended mixture into a tall glass, then top with whipped cream and crushed mint Oreo crumbs. Enjoy!
3- Slim Mint Shake

A frozen mint cookies and cream coffee treat that won’t ruin your nutritional goals?
Yes, please!
It’s true, coffee frappes and milkshakes are incredibly tasty, especially when they incorporate cookies, mint, and other yummy additions, but these aren’t always what we want to reach for on a regular basis.
Sure, they’re great for a sweet treat, but you can also make a few healthy swaps to transform just about any frappe or milkshake into a slimmer, trimmer, just as tasty treat.
And, that’s what we’re going to do here!
In fact, we’re going to take the recipe above, and make a few swaps to show you just how simple this can be. (And, you can do this with just about any recipe, so don’t be afraid to try this with others!)
Take a look:
The above recipe calls for coffee, sweet coffee creamer, mint Oreo cookies, chocolate syrup, and whipped cream.
But, let’s see what happens when we make a few swaps.
- First, the good news is you certainly won’t have to swap your coffee!

- Lastly, for the whipped cream, you can either omit this topping, or if you’d like to use it, feel free to make your own whipped cream using organic heavy cream and a few drops of liquid stevia or monk fruit sweetener. We’ll include instructions for this optional topping in the recipe below.

Now for the step-by-step details…
Ingredients
- 8 ounces cold brewed Lifeboost Mint Cookies ‘n Cream Coffee
- ¼ cup half & half or milk of your choosing
- ¼ teaspoon liquid stevia
- 2 tablespoons chocolate syrup (see homemade recipe below)
- 2 thin mint Oreos (or omit this ingredient for a lighter option)
- 1 ½ cups ice
- ¼ cup heavy whipping cream
- 1-2 drops liquid stevia
Instructions
- If you’d like to incorporate a whipped cream topping, add heavy cream and 1-2 drops liquid stevia to a chilled bowl, and beat with a mixer until soft-medium peaks form, then set aside.
- Add cold brew, half and half, ¼ teaspoon liquid stevia, chocolate syrup, thin mint Oreos (if using), and ice to a blender, then blend on high until smooth.
- Pour blended mixture into a tall glass, and top with homemade whipped cream, if desired, and enjoy!
Homemade Chocolate Syrup
- ¼ cup pure maple syrup
- 2 tablespoons unsweetened cocoa powder
- Add syrup and cocoa powder to a bowl and mix until well combined. Use immediately or store in the refrigerator in an airtight container for 1-2 weeks.
4- Summer’s Sweet Retreat

Growing up, milkshakes were a summer staple in our family.
My mom used to pull out her stainless steel mixing bowl to make a large batch of them, so when we saw that shiny bowl, we knew what was coming.
Now, couple this with the fact that my grandparents used to make homemade ice cream regularly throughout the summer months, and well, we were never without sweet, cool, summer treats.
And, that’s what this recipe yields…a sweet summer treat…but with the addition of mint, this treat feels like a retreat!
Note: This calls for 1 cup of vanilla ice cream and ½ cup of mint cookies and cream ice cream, but feel free to use 1 ½ cups of vanilla ice cream or 1 ½ cups of mint cookies and cream ice cream to make things less complicated. You could also sub chocolate ice cream for the vanilla ice cream to turn this shake into a chocolate mint cookies and cream coffee shake.
Ingredients (serves 4)
- 4 ounces cold brewed Lifeboost Mint Cookies ‘n Cream Coffee
- 2 ounces whole milk
- 1 cup vanilla ice cream
- ½ cup mint cookies and cream ice cream
- 8 mint Oreos (or regular Oreos)
- 1 small handful fresh mint leaves, plus extra for garnish

- Add all ingredients to a blender and blend on high until smooth and creamy.

5- Minty Mocha Frappe

For those looking to skip the actual cookie ingredient in a mint cookies and cream frappe, this recipe allows you to subtly savor those flavors infused into our tremendously tasty Mint Cookies ‘n Cream Coffee without any extra sandwich cookie additions.
And, as a bonus, you’ll get to try your hand at making coffee ice cubes that you can use to keep any chilled coffee concoction nice and cold without getting watered down.
I mean, we all love iced coffee, but regular ice, as it melts, can really put a damper on the bold flavors of your brew.
When you use coffee ice cubes, however, when these melt, you’ll just get more of that robust, tasty, smooth coffee goodness in your cup…or frappe.

Ingredients (serves 2)
- 2 trays of coffee ice cubes (using Lifeboost Mint Cookies ‘n Cream Coffee)
- 1-1 ½ cups chocolate milk
- 1-2 teaspoons organic cane sugar (optional)
- ¼ teaspoon peppermint extract
- Whipped cream, optional for topping
Instructions
- Place all ingredients in a blender and blend on high until smooth and slushy. (It’s advisable to start blending slowly, then increase the blending speed as the ice begins to incorporate.)
- Pour into a tall glass, then top with whipped cream, if desired. Enjoy!

- 2 12 cube ice cube trays
- 2 cups cold brewed Lifeboost Mint Cookies ‘n Cream Coffee
If you make cold brew into a concentrate, I’d recommend using the concentrate without watering it down in this recipe.
If you generally don’t make cold brew, you can also strongly brew your coffee as usual, then set it aside to cool before pouring into the trays.
Once the coffee is cooled or ready to pour, add two cups of Lifeboost Mint Cookies ‘n
Cream Coffee to the ice cube trays, pouring evenly between 2 12 cube trays.
Refrigerate the filled ice cube trays overnight (or until frozen).
