Maybe it’s just me, but caramel is one coffee flavor addition that seems intimidating. 

I’ve made simple syrups, fruit based and floral flavorings and spiced and nut-based syrups. I also make a simple chocolate sauce that my family has raved over for years. 

But, caramel? 

Caramel is one of my favorite flavors, but for some reason, I’ve generally opted for store bought caramel sauces - until now. 

This year I’ve been swapping anything and everything I can for homemade, in most cases omitting the item or product entirely if I can’t mosey on out of my comfort zone enough to make it myself. 

So, I’m bringing you along on my homemade ride before we ever brew a cup today. 

Of course, as we dive into the best caramel coffee recipes here in a few moments, you can certainly opt for whichever type of caramel sauces and syrups you love best

Homemade Caramel Syrup

Caramel syrup is a lot like a simple syrup, but due to differing ratios and the fact that the sugar caramelizes first in this type of syrup, the resulting flavor is deeper and richer, a classic flavor distinction caramel-lovers recognize immediately. 

Ingredients

  • ¾ cup sugar
  • 1 cup water, divided
  • ½ teaspoon real vanilla extract

Instructions

  • Add sugar and ½ cup water to a medium saucepan, whisk together, then heat over medium-high heat until the mixture begins to boil. *Caramel syrup isn’t one that you’ll want to stir continually throughout the process, as this causes the sugar to crystalize on the sides of the pan, potentially changing the overall flavor and texture. 
  • Once the sugar is completely dissolved, reduce the heat slightly. *Note: temperature reductions will vary depending on the type of stove you have. On a gas stovetop, you may need to lower to a medium/medium-low heat. On an electric stovetop, you may need to keep the heat at medium-high or lower only to medium. 
  • Continue to adjust the temperature as the mixture cooks, keeping it at a low boil with bubbles continually rising to the surface. You’ll need the mixture to cook at a low boil for approximately 15-18 minutes, until it turns a light golden amber color. *You may notice at around the 10-minute mark that the boiling slows. If this happens, slightly increase the heat. You don’t need to stir it, but the pot can be swirled occasionally by lifting the pan and gently moving it in a circular motion. 
  • While the mixture continues to simmer, heat the remaining ½ cup of water in a small saucepan. Since you’ll be adding this to the extremely hot caramel syrup, heating prior to adding will significantly reduce the tendency for it to spatter. 
  • Once the light golden amber color appears just around the edges of the caramel syrup, remove the saucepan from the heat. **Depending on the lighting in your kitchen and the color of your pan, it can be a little hard to see this. This is why it’s important to pay close attention. If you let the mixture boil too long past this color change, it can become too thick or even burn, resulting in a burnt or bitter flavor, ruining the syrup. 
  • Once removed from the heat, wearing oven mitts, carefully whisk the heated ½ cup of water into the caramel syrup. Even heated, this will still likely spatter, so exercise caution. Should this cause any of the syrup to harden, keep whisking or return the mixture to the heat just long enough for it to dissolve again. 
  • Stir in the vanilla extract, then allow the mixture to cool completely before transferring to an airtight container. Store in the refrigerator for up to two weeks. (You can use immediately in hot drinks, but it’s best to allow it to chill before using in iced drinks.)

*Note: If you’d like to make this a salted caramel syrup, you can simply add ¼ teaspoon of sea salt when it’s cooled to warm (not yet cooled completely).

Homemade Caramel Sauce

Caramel sauce has a thicker texture and a richer flavor than caramel syrup as it also contains butter and/or cream. 

While caramel syrup is great for stirring into hot and iced coffee, caramel sauce is best suited for topping your delicious brew…or ice cream, etc. 

Ingredients

  • 1 cup granulated sugar
  • ⅓ cup water
  • 6 tablespoons unsalted butter (room temperature, cut into cubes)
  • ½ cup heavy cream, warm
  • 1 teaspoon pure vanilla extract
  • 1 pinch of sea salt (just to cut the sweetness, if you’d like a salted caramel sauce, plan to add more to taste)

Instructions

  • Add sugar to the bottom of a heavy-bottomed saucepan and swirl the pan to evenly distribute the sugar. 
  • Drizzle water over the sugar and let it sit for a few minutes to fully moisten the sugar. Do Not Stir! You don’t want sugar to get splashed on the sides of your pan. 
  • Heat over medium-low heat, and without stirring, let the sugar dissolve completely, until clear (about 5 minutes, depending on your pan and heat source). The mixture should be clear and fully dissolved before it simmers. 
  • Without stirring, bring to a simmer and increase to medium heat. If you see sugar crystals forming on the sides of the pan, cover with a lid for 30-60 seconds. 
  • When the caramel begins to take on a little color, occasionally (gently) swirl the pan, then continue cooking until it becomes a light amber or honey color (roughly 5-8 minutes).
  • Avoid letting it get too dark in color, as this will yield a very bitter taste. 
  • Reduce the heat to medium-low and carefully whisk in half of the softened butter cubes, then add and whisk in the remaining cubes. The mixture will bubble a lot during these additions; this is normal. Continue whisking until the butter is fully incorporated. Should it separate during this step, simply remove the pan from the heat and whisk until the butter incorporates, then return to the heat. 
  • Slowly pour in the warmed heavy cream, whisking continually as you pour. The mixture will bubble again as you pour, just keep whisking until the mixture is smooth, then remove from the heat. 
  • Once removed from the heat, whisk in the vanilla and salt. 
  • Allow the mixture to cool slightly before using. The caramel sauce will thicken quite a bit as it sits, and it’ll thicken even more under refrigeration. 
  • Store in an airtight container in the refrigerator for up to two weeks.
